Ingredients
3 medium-sized selar
3 tbs sambal chilli sauce
2 tsp salt
2 tsp pepper
1 cup of cooking oil
Method
1. Gut, scale and clean the fish.
2. Make an deep cut from inside the stomach of the fish, as wide and as far down towards the tail as you can.
3. Stuff the sambal chilli sauce into the incision.
4. Season the exterior of the fish with salt & pepper.
5. Refrigerate and allow to marinate for 1 hour.
6. Heat oil in a wok. Put fish in and fry till golden brown.
9. Serve immediately.
