Ingredients
400g freshwater prawns
1 egg
2 heaped tbsp minced garlic
1 tsp minced chilli padi
1 tsp salt
1 tbsp fish sauce
1 tbsp chinese wine
4 tbsp water

Method
1. Wash the prawns. Remove the pincers and feelers.
2. Cut prawns length-wise (esp. the bigger ones to ensure even cooking).
3. Rub salt on exposed flesh of prawns.
4. Arrange prawns (flesh facing up) in a dish.
5. Sprinkle minced garlic and chilli evenly over the prawns.
6. Beat the egg with the water, fish sauce and wine.
7. Pour the mixture all over the prawns and add a few dashes of pepper.
8. Steam for 8 minutes and serve immediately.
