Tom Yum Soup (serves 2)

Tom Yum Soup
Ingredients
200g Fillet of sea bass
100g straw or enoki mushroom
1/2 chicken/fish flavour cube
1 stalk lemongrass
6 kaffir lime leaves
Juice of 1 large green lime
2 red chilli
2 cloves shallots
2 cloves garlic
1 sprig coriander
2 tsp fish sauce
1 tsp chilli paste
Pinch of salt n pepper
3 bowls of water

Method
1. Make sure that every bit of bone is removed and cut fish into slices.
2. Add salt and pepper. Mix well to marinate.
3. Using a pestle, pound the ginger and lemongrass a few times. Tear the lime leaves and slice the garlic and shallots. Remove seeds from the chilli and cut into long strips.
4. Bring water to a boil and add the flavour cube, chilli paste and all the ingredients in step 3.
5. Simmer for about 5 minutes and add the fish and mushroom.
6. Bring to a boil again and stir in the fish sauce, lime juice and shredded coriander.
7. Serve immediately.
